Dal Baati Churma is one of the most famous dish of Rajasthan.

Churmawalas located in Chitrakoot in Vaishali Nagar, Jaipur is known for its unique variety of churma. People flock here to eat 14 varieties ranging from Gulab, Gulkand, Chikoo to Almond, Pistachio. This restaurant was started by IT experts and engineer brothers together.

Harsh Pareek is a mechanical engineer and his younger brother Akash Pareek has studied BCA. Harsh says that his father used to do construction work, but the work came to a halt due to demonetization. After the financial condition worsened, both the brothers started working together with their father.

Left the job offer, opened a restaurant with father

Harsh said that at the time of demonetization, I was in the last semester of engineering. At the same time, I got a placement in a South Indian company from college. Then the circumstances were such that I felt it necessary to stay in Jaipur to support my family and father.

Both of us brothers together with our father started a multi cuisine restaurant on Ajmer Road. A large number of tourists from Haryana and Delhi used to come to the restaurant.

Most of the tourists used to come to the restaurant and ask for Rajasthan's traditional food Daal-Baati Churma. At that time Daal Baati Churma was not in the menu of our restaurant. In such a situation, we used to prepare Rajasthani thali on special demand for the tourists.

We started getting good feedback from the guests and local customers also started coming. We used to prepare Daal Baati in a completely traditional way. Roasting the Baatis by burning embers, tempering the dal in desi ghee, crushing the Baatis and making churma. Due to which people started liking its taste.

The younger brother suggested that why not open an outlet for local customers in Vaishali Nagar. Started takeaway in Vaishali Nagar in December 2018. Harsh says that when we were starting this outlet, there was a fear in the mind that we don't know whether we will get response from the people or not.

Because Daal Baati is made in every household, why would customers come to us? But our fears were just the opposite. When we started it, we started getting a very good response from the people on the very first day. There was such a huge crowd of customers at the shop which was completely different from our expectations.
